Gluten Free Granola

It's Coeliac Awareness Week in Ireland this week.. I'll be writing a post every day this week with some facts about Coeliac Disease.
So oats are naturally gluten free, they can be subject to cross contamination when processed or stored in a facility using gluten containing grains.
Coeliac Disease is an autoimmune disease in which the body’s immune system attacks the small intestine when the protein, gluten is ingested. Gluten is the protein found in rye, barley, wheat, durum & also oats when cross contamination occurs (harvested, processed or stored with gluten containing grains).
Most coeliacs can tolerate gluten free oats with out issues. Newly diagnosed coeliacs are not advised to add gluten free oats for at least a year after diagnosis.
While oats are naturally gluten free, some coeliacs suffer from a sensitivity to avenin which is a protein similar to gluten. Oats contain avenin.
The defining factor that makes oats 'gluten free' is the processes, storage methods and that they are not contaminated with gluten containing grains .

Cooking time: 16 minutes
Temperature: 160°C Fan
Ingredients:

30g Cashews
30g Hazelnuts
40g Almonds
60g Honey
10g Maple Syrup
10g Demerara
2g Maldon Salt
10g Sunflower Oil
300g Gluten Free Oats
Method:
Preheat fan oven to 160°C.
Toast the mixed nuts in a dry cast iron pan on a medium heat, or in oven until lightly golden.
Roughly chop the nuts while still warm and add to the oats.
Heat the honey, maple syrup, sugar, salt and oil until boils. Add the hot syrup to the oats and mix until just combined.
Check the seasoning of the oats, if you want to adjust the flavours; add sugar, honey, salt, cinnamon, nutmeg or spices of your choice.
Bake the granola mix at 160°C for approx 15 minutes on a reusable silicone mat or baking parchment in a shallow oven proof tray.
Stir the mixture halfway through cooking time so all the granola gets an even golden colouring.
Leave to cool on the tray.
Once granola is cool, add apricots, currants or even chocolate chips. Store in an airtight container, away from direct sunlight.
If you don't have Sunflower Oil, you can use another neutral oil

Hazelnut Oil
Clarified Butter
